Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tomato, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the diced tomato, chopped parsley, and mint to the pan. Cook for a few minutes until the tomatoes are softened.
  3. Stir in the cooked rice, allspice, cinnamon, salt, and pepper. Cook for another 2-3 minutes, then remove from heat.
  4. Preheat the oven to 375°F (190°C).
  5. Fill each mushroom cap with the rice mixture and place them in a baking dish.
  6. Pour the vegetable broth into the bottom of the baking dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Uncover the dish and bake for an additional 10 minutes, or until the mushrooms are tender.
  9. Serve the stuffed mushrooms hot and enjoy!
