Mahshi Fawaki (assyrian Stuffed Mushrooms)
Mahshi Fawaki, or Assyrian Stuffed Mushrooms, is a delicious and savory dish that is a staple in Assyrian cuisine. These stuffed mushrooms are filled with a flavorful mixture of rice, herbs, and spices, making them a perfect appetizer or side dish for any occasion.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tomato, diced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 teaspoon allspice
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 1/4 cup vegetable broth
- 2 tablespoons olive oil
Instructions
- In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the diced tomato, chopped parsley, and mint to the pan. Cook for a few minutes until the tomatoes are softened.
- Stir in the cooked rice, allspice, cinnamon, salt, and pepper. Cook for another 2-3 minutes, then remove from heat.
- Preheat the oven to 375°F (190°C).
- Fill each mushroom cap with the rice mixture and place them in a baking dish.
- Pour the vegetable broth into the bottom of the baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Uncover the dish and bake for an additional 10 minutes, or until the mushrooms are tender.
- Serve the stuffed mushrooms hot and enjoy!
