Ingredients

  • 4 large bell peppers
  • 1 cup long-grain rice
  • 300g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, ground meat, onion, tomatoes, garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  4. Stuff the bell peppers with the rice and meat mixture, and place them in a deep pot.
  5. Pour the broth over the stuffed peppers, cover the pot, and simmer on the stovetop for 1 hour or until the peppers are tender and the filling is cooked.
  6. Once cooked, remove the stuffed peppers from the pot and place them on a serving dish.
  7. Garnish with fresh parsley and serve hot.
