Ingredients
- 4 large bell peppers, any color
- 1 cup cooked rice
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the cooked rice, ground beef or lamb, onion, tomatoes, garlic, cumin, paprika, cinnamon, parsley, salt, and pepper.
- Stuff the bell peppers with the rice and meat mixture.
- Place the stuffed peppers in a deep skillet or baking dish. Drizzle with olive oil.
- Cover the skillet or dish with a lid or foil and cook on the stovetop over medium heat for 45 minutes, or bake in the preheated oven for the same amount of time.
- Once the peppers are tender and the filling is cooked through, remove from heat and let them cool for a few minutes before serving.
