Ingredients

  • 4 large bell peppers, any color
  • 1 cup cooked rice
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the cooked rice, ground beef or lamb, onion, tomatoes, garlic, cumin, paprika, cinnamon, parsley, salt, and pepper.
  4. Stuff the bell peppers with the rice and meat mixture.
  5. Place the stuffed peppers in a deep skillet or baking dish. Drizzle with olive oil.
  6. Cover the skillet or dish with a lid or foil and cook on the stovetop over medium heat for 45 minutes, or bake in the preheated oven for the same amount of time.
  7. Once the peppers are tender and the filling is cooked through, remove from heat and let them cool for a few minutes before serving.
