Mahshi Fil Fil (saudi Arabian Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 250g ground beef or lamb
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a bowl, mix the cooked rice, ground meat, onion, garlic, cumin, paprika, cinnamon, salt, and pepper.
  3. Stuff the bell peppers with the rice and meat mixture.
  4. In a separate bowl, mix the tomato paste with olive oil and a pinch of salt. Spoon the mixture over the stuffed peppers.
  5. Place the stuffed peppers in a pot, add a little water to the bottom, cover, and cook over medium heat for 30-40 minutes, or until the peppers are tender and the filling is cooked through.
  6. Serve the Mahshi Fil Fil hot, garnished with fresh parsley.
