Mahshi Filfil (stuffed Bell Peppers With Rice And Lamb)

Ingredients

  • 4 large bell peppers
  • 1 cup long-grain rice
  • 250g ground lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the diced tomatoes, cumin, paprika, cinnamon, and season with salt and pepper. Cook for a few minutes until the tomatoes soften.
  4. Add the rice to the skillet and stir to combine with the lamb mixture. Cook for 2-3 minutes.
  5. Carefully cut the tops off the bell peppers and remove the seeds and membranes from the insides.
  6. Stuff the bell peppers with the rice and lamb mixture, pressing down gently to fill the peppers evenly.
  7. Place the stuffed peppers in a deep pot and pour the chicken or vegetable broth over them.
  8. Cover the pot and simmer over low heat for 45-50 minutes, or until the peppers are tender and the rice is cooked.
  9. Once cooked, remove the stuffed peppers from the pot and serve hot.
