Ingredients

  • 4 large artichokes
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1/4 cup lemon juice

Instructions

  1. Prepare the artichokes by cutting off the stems and removing the tough outer leaves.
  2. Scoop out the choke and inner leaves to create a cavity in the center of each artichoke.
  3. In a bowl, mix together the rice, ground beef, onion, tomato, parsley, mint, allspice, cinnamon, salt, and pepper.
  4. Stuff the mixture into the cavities of the artichokes.
  5. Place the stuffed artichokes in a pot and pour the chicken broth and lemon juice over them.
  6. Cover the pot and cook the artichokes over medium heat for 45 minutes, or until the rice is cooked and the artichokes are tender.
  7. Serve the Mahshi Kharshoof hot and enjoy!
