Ingredients
- 4 large artichokes
- 1 cup rice
- 1 lb ground beef
- 1 onion, finely chopped
- 1 tomato, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 teaspoon allspice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups chicken broth
- 1/4 cup lemon juice
Instructions
- Prepare the artichokes by cutting off the stems and removing the tough outer leaves.
- Scoop out the choke and inner leaves to create a cavity in the center of each artichoke.
- In a bowl, mix together the rice, ground beef, onion, tomato, parsley, mint, allspice, cinnamon, salt, and pepper.
- Stuff the mixture into the cavities of the artichokes.
- Place the stuffed artichokes in a pot and pour the chicken broth and lemon juice over them.
- Cover the pot and cook the artichokes over medium heat for 45 minutes, or until the rice is cooked and the artichokes are tender.
