Ingredients

  • 4 large artichokes
  • 1 pound ground beef
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the stems.
  2. In a large bowl, mix together the ground beef, rice, onion, tomatoes, tomato paste, allspice, cinnamon, cumin, parsley, salt, and pepper.
  3. Carefully stuff the artichoke hearts with the ground beef mixture, pressing it firmly into the leaves.
  4. Place the stuffed artichokes in a large pot and pour the broth over them.
  5. Cover the pot and cook the stuffed artichokes over medium heat for 1 hour, or until the artichokes are tender and the filling is cooked through.
