Ingredients
- 4 large artichokes
- 1 cup long-grain rice
- 250g ground lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 3 cups chicken or vegetable broth
- Juice of 1 lemon
- 2 tablespoons olive oil
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the tops. Scoop out the choke with a spoon and set aside.
- In a large bowl, combine the rice, ground lamb, onion, tomatoes, garlic, parsley, mint, cumin, coriander, cinnamon, salt, and pepper. Mix well.
- Stuff the prepared artichokes with the rice and lamb mixture, pressing it firmly into the leaves.
- Place the stuffed artichokes in a deep pot. Pour the chicken or vegetable broth over the artichokes and drizzle with lemon juice and olive oil.
- Cover the pot and cook the artichokes over medium heat for 1 hour, or until the rice and lamb are fully cooked and the artichokes are tender.
- Serve the Mahshi Khurshuf hot, garnished with additional fresh herbs if desired.
