Ingredients
- 4 medium zucchinis
- 1 cup long-grain rice
- 250g ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Fresh parsley for garnish
Instructions
- Prepare the zucchinis by cutting off the tops and scooping out the flesh to create a hollow cavity. Set aside.
- In a bowl, combine the rice, ground meat, onion, tomatoes, garlic, cumin, coriander, cinnamon, salt, and pepper. Mix well.
- Stuff the hollowed zucchinis with the rice and meat mixture, then place them in a large pot.
- Pour the broth over the stuffed zucchinis, cover the pot, and simmer over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
- Once cooked, transfer the stuffed zucchinis to a serving platter, garnish with fresh parsley, and serve hot.
