Ingredients

  • 4 medium zucchinis
  • 1 cup long-grain rice
  • 250g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Prepare the zucchinis by cutting off the tops and scooping out the flesh to create a hollow cavity. Set aside.
  2. In a bowl, combine the rice, ground meat, onion, tomatoes, garlic, cumin, coriander, cinnamon, salt, and pepper. Mix well.
  3. Stuff the hollowed zucchinis with the rice and meat mixture, then place them in a large pot.
  4. Pour the broth over the stuffed zucchinis, cover the pot, and simmer over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  5. Once cooked, transfer the stuffed zucchinis to a serving platter, garnish with fresh parsley, and serve hot.
