Ingredients

  • 1 large head of cabbage
  • 1 cup of rice
  • 1 pound of ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • 1/2 teaspoon of cinnamon
  • Salt and pepper to taste
  • 2 cups of tomato sauce
  • 2 cups of beef or vegetable broth
  • 1/4 cup of olive oil

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage, blanch them in the boiling water for a few minutes until they are pliable, then remove and set aside.
  2. In a bowl, mix together the rice, ground meat, onion, garlic, paprika, cumin, cinnamon, salt, and pepper.
  3. Place a spoonful of the rice and meat mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go.
  4. Place the stuffed cabbage rolls in a large pot, seam side down. Pour the tomato sauce, broth, and olive oil over the rolls.
  5. Cover the pot and simmer over low heat for about 1 hour, or until the cabbage is tender and the filling is cooked through.
  6. Serve the Mahshi Malfouf hot, with a side of couscous or crusty bread.
