Ingredients
- 1 large head of cabbage
- 1 cup of rice
- 1 pound of ground beef or lamb
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- 1/2 teaspoon of cinnamon
- Salt and pepper to taste
- 2 cups of tomato sauce
- 2 cups of beef or vegetable broth
- 1/4 cup of olive oil
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage, blanch them in the boiling water for a few minutes until they are pliable, then remove and set aside.
- In a bowl, mix together the rice, ground meat, onion, garlic, paprika, cumin, cinnamon, salt, and pepper.
- Place a spoonful of the rice and meat mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go.
- Place the stuffed cabbage rolls in a large pot, seam side down. Pour the tomato sauce, broth, and olive oil over the rolls.
- Cover the pot and simmer over low heat for about 1 hour, or until the cabbage is tender and the filling is cooked through.
- Serve the Mahshi Malfouf hot, with a side of couscous or crusty bread.
