Mahshi Malfouf (saudi Arabian Stuffed Cabbage Rolls)

Ingredients

  • 1 large head of cabbage
  • 1 cup of rice
  • 500g ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • Salt and pepper to taste
  • 2 cups of chicken or vegetable broth

Instructions

  1. Boil the whole head of cabbage in a large pot of water for 5-7 minutes until the leaves are soft and pliable. Remove from the water and let it cool.
  2. In a mixing bowl, combine the rice, ground beef, onion, tomatoes, tomato paste, cinnamon, allspice, salt, and pepper. Mix well.
  3. Carefully peel off the cabbage leaves and place a spoonful of the meat and rice mixture in the center of each leaf. Roll the leaves, tucking in the sides, to form the cabbage rolls.
  4. Place the cabbage rolls in a large pot, seam side down. Pour the broth over the rolls and bring to a simmer.
  5. Cover and cook for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
  6. Serve the Mahshi Malfouf hot with a side of yogurt or salad.
