Mahshi Malfouf (stuffed Cabbage Rolls With Lamb And Rice)
Mahshi Malfouf is a traditional Libyan dish of stuffed cabbage rolls filled with a savory mixture of lamb and rice. This hearty and flavorful meal is perfect for a special occasion or a comforting family dinner.
Ingredients
- 1 large head of cabbage
- 1 lb ground lamb
- 1 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 cups chicken or vegetable broth
- Fresh parsley for garnish
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the leaves. Set aside.
- In a large bowl, mix the ground lamb, uncooked rice, chopped onion, minced garlic, cumin, paprika, cinnamon, salt, and pepper until well combined.
- Place a spoonful of the lamb and rice mixture onto each cabbage leaf. Roll the leaf around the filling, tucking in the sides as you go. Place the cabbage rolls seam side down in a large pot.
- Pour the tomato sauce and broth over the cabbage rolls. Cover the pot and simmer over medium heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Once cooked, transfer the cabbage rolls to a serving dish and spoon the sauce over the top. Garnish with fresh parsley and serve hot.
