Mahshi (stuffed Bell Peppers)
Mahshi, or Stuffed Bell Peppers, is a delicious and flavorful dish that is popular in Navyath Muslim Cuisine. The dish is made by stuffing bell peppers with a savory filling and cooking them to perfection.
Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 cup cooked lentils
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the cooked rice, cooked lentils, chopped onion, diced tomatoes, minced garlic, cumin powder, coriander powder, paprika, salt, and pepper.
- Stuff the bell peppers with the rice and lentil mixture.
- Heat olive oil in a large skillet over medium heat. Place the stuffed bell peppers in the skillet and cook for 5 minutes, turning occasionally, until they are lightly browned.
- Pour 1 cup of water into the skillet, cover, and simmer for 30 minutes, or until the peppers are tender.
- Garnish with fresh parsley before serving.
