Mahshi (stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup cooked lentils
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large bowl, mix together the cooked rice, cooked lentils, chopped onion, diced tomatoes, minced garlic, cumin powder, coriander powder, paprika, salt, and pepper.
  3. Stuff the bell peppers with the rice and lentil mixture.
  4. Heat olive oil in a large skillet over medium heat. Place the stuffed bell peppers in the skillet and cook for 5 minutes, turning occasionally, until they are lightly browned.
  5. Pour 1 cup of water into the skillet, cover, and simmer for 30 minutes, or until the peppers are tender.
  6. Garnish with fresh parsley before serving.
