Ingredients

  • 4 large artichokes
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1/2 cup chopped parsley
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups vegetable broth

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and cutting off the top.
  2. Mix the cooked rice, chopped onion, parsley, olive oil, cumin, salt, and pepper in a bowl.
  3. Stuff the artichokes with the rice mixture.
  4. Place the stuffed artichokes in a pot and pour the vegetable broth over them.
  5. Cover the pot and cook over medium heat for 45 minutes, or until the artichokes are tender.
