Mahshi (tunisian Stuffed Artichokes)
Mahshi is a traditional Tunisian dish made with stuffed artichokes, cooked to perfection and bursting with flavorful ingredients.
Ingredients
- 4 large artichokes
- 1 cup cooked rice
- 1 onion, finely chopped
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups vegetable broth
Instructions
- Prepare the artichokes by removing the tough outer leaves and cutting off the top.
- Mix the cooked rice, chopped onion, parsley, olive oil, cumin, salt, and pepper in a bowl.
- Stuff the artichokes with the rice mixture.
- Place the stuffed artichokes in a pot and pour the vegetable broth over them.
- Cover the pot and cook over medium heat for 45 minutes, or until the artichokes are tender.
