Mahshi is a traditional Tunisian dish consisting of flavorful stuffed cabbage rolls. This dish is a perfect combination of tender cabbage leaves filled with a delicious mixture of rice, ground meat, and aromatic spices. Ingredients
- 1 large head of cabbage
- 1 cup of rice
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups tomato sauce
- 2 cups chicken or vegetable broth
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes until they are pliable. Remove and set aside to cool.
- In a bowl, combine the rice, ground meat, onion, tomatoes, parsley, mint, garlic, cinnamon, cumin, salt, and pepper. Mix well to combine.
- Place a spoonful of the meat and rice mixture onto each cabbage leaf and roll it up, tucking in the sides to create a neat roll.
- Place the stuffed cabbage rolls in a large pot, seam side down. Pour the tomato sauce and broth over the rolls, ensuring they are fully submerged.
- Cover the pot and simmer over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Serve the mahshi hot, spooning some of the tomato sauce from the pot over each roll.
