Ingredients

  • 12 large mushrooms, stems removed and reserved

  • 1/4 teaspoon cumin

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and sauté them with the onion and garlic in a pan until softened.
  3. In a bowl, mix the cooked rice, sautéed mushroom mixture, parsley, Parmesan cheese, cumin, salt, and pepper.
  4. Stuff each mushroom cap with the rice mixture and place them in a baking dish.
  5. Drizzle the stuffed mushrooms with olive oil and bake for 25 minutes, or until the mushrooms are tender.
