Mahshi (tunisian Stuffed Squash)

Ingredients

  • 4 small yellow squash
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
  3. In a bowl, combine the cooked rice, onion, tomatoes, parsley, mint, garlic, cumin, coriander, cayenne pepper, salt, and pepper.
  4. Stuff the hollowed squash with the rice mixture.
  5. Place the stuffed squash in a large pot and drizzle with olive oil.
  6. Pour the vegetable broth into the pot, cover, and simmer over medium heat for 30-40 minutes, or until the squash is tender.
  7. Serve the Mahshi hot and enjoy!
