Mahshi (tunisian Stuffed Squash)
Mahshi is a traditional Tunisian dish that consists of stuffed vegetables, and one of the most popular variations is Mahshi, which features stuffed squash. This flavorful and aromatic dish is a staple in Tunisian cuisine and is perfect for a hearty and satisfying meal.
Ingredients
- 4 small yellow squash
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the squash and scoop out the seeds to create a hollow cavity.
- In a bowl, combine the cooked rice, onion, tomatoes, parsley, mint, garlic, cumin, coriander, cayenne pepper, salt, and pepper.
- Stuff the hollowed squash with the rice mixture.
- Place the stuffed squash in a large pot and drizzle with olive oil.
- Pour the vegetable broth into the pot, cover, and simmer over medium heat for 30-40 minutes, or until the squash is tender.
- Serve the Mahshi hot and enjoy!
