Majadra Magic
Majadra is a traditional Middle Eastern dish with Israeli roots, made from lentils, rice, and caramelized onions. This flavorful and comforting dish is a staple in Israeli cuisine, often enjoyed as a side or main course.
Ingredients
- 1 cup green or brown lentils
- 1 cup basmati rice
- 3 large onions, thinly sliced
- 4 cups water
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in a pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the rice to the pot with the lentils, cover, and cook for an additional 15 minutes or until the rice and lentils are tender and the water is absorbed.
- While the lentils and rice are cooking, heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deep golden brown and caramelized, about 20-25 minutes.
- Once the onions are caramelized, remove half of them from the skillet and set aside for garnish.
- To the remaining onions in the skillet, add the cumin, coriander, cinnamon, salt, and pepper. Cook for an additional 2-3 minutes, stirring to combine the spices with the onions.
- Once the lentils and rice are cooked, add the spiced onions to the pot and gently stir to combine everything.
- Transfer the majadra to a serving dish and top with the reserved caramelized onions.
