Majadra is a traditional Middle Eastern dish with Israeli roots, made from lentils, rice, and caramelized onions. This flavorful and comforting dish is a staple in Israeli cuisine, often enjoyed as a side or main course.

Ingredients

  • 1 cup green or brown lentils
  • 1 cup basmati rice
  • 3 large onions, thinly sliced
  • 4 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and place them in a pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Add the rice to the pot with the lentils, cover, and cook for an additional 15 minutes or until the rice and lentils are tender and the water is absorbed.
  3. While the lentils and rice are cooking, heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deep golden brown and caramelized, about 20-25 minutes.
  4. Once the onions are caramelized, remove half of them from the skillet and set aside for garnish.
  5. To the remaining onions in the skillet, add the cumin, coriander, cinnamon, salt, and pepper. Cook for an additional 2-3 minutes, stirring to combine the spices with the onions.
  6. Once the lentils and rice are cooked, add the spiced onions to the pot and gently stir to combine everything.
  7. Transfer the majadra to a serving dish and top with the reserved caramelized onions.
