Majarete is a traditional Nicaraguan dessert made with sweet corn and coconut milk. This creamy and sweet pudding is a popular treat enjoyed during special occasions and celebrations.
Ingredients
- 4 cups fresh or frozen sweet corn kernels
- 1 can (14 oz) coconut milk
- 1 cup whole milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Pinch of salt
Instructions
- In a blender, combine the sweet corn kernels and coconut milk. Blend until smooth.
- Pour the mixture into a large saucepan and add the whole milk, sugar, vanilla extract, cinnamon, and salt.
- Cook over medium heat, stirring constantly, until the mixture thickens, about 15-20 minutes.
- Remove from heat and let it cool for a few minutes.
- Pour the mixture into individual serving cups or a large serving dish. Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
