Ingredients

  • 4 cups fresh or frozen sweet corn kernels
  • 1 can (14 oz) coconut milk
  • 1 cup whole milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. In a blender, combine the sweet corn kernels and coconut milk. Blend until smooth.
  2. Pour the mixture into a large saucepan and add the whole milk, sugar, vanilla extract, cinnamon, and salt.
  3. Cook over medium heat, stirring constantly, until the mixture thickens, about 15-20 minutes.
  4. Remove from heat and let it cool for a few minutes.
  5. Pour the mixture into individual serving cups or a large serving dish. Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
