Majboos (savory Lentil And Rice Pilaf)

Ingredients

  • 1 cup basmati rice
  • 1 cup brown lentils
  • 500g chicken, lamb, or beef, cut into pieces
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons Arabic baharat spice mix
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 3 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and garlic, and sauté until they are soft and translucent.
  2. Add the meat to the pot and cook until browned on all sides.
  3. Stir in the Arabic baharat spice mix, turmeric, cumin, and coriander, and cook for a few minutes until fragrant.
  4. Add the diced tomatoes and cook for another 5 minutes.
  5. Rinse the lentils and rice, then add them to the pot along with the chicken or beef broth. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  7. Fluff the majboos with a fork and serve hot.
