Majboos (savory Lentil And Rice Pilaf)
Majboos is a popular Emirati dish that features a savory combination of lentils and rice, flavored with aromatic spices and tender meat. This hearty pilaf is a staple in Emirati cuisine and is perfect for family gatherings and special occasions.
Ingredients
- 1 cup basmati rice
- 1 cup brown lentils
- 500g chicken, lamb, or beef, cut into pieces
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons Arabic baharat spice mix
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 4 cups chicken or beef broth
- Salt and pepper to taste
- 3 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and garlic, and sauté until they are soft and translucent.
- Add the meat to the pot and cook until browned on all sides.
- Stir in the Arabic baharat spice mix, turmeric, cumin, and coriander, and cook for a few minutes until fragrant.
- Add the diced tomatoes and cook for another 5 minutes.
- Rinse the lentils and rice, then add them to the pot along with the chicken or beef broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Fluff the majboos with a fork and serve hot.
