Majorcan Lamb

Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp dried oregano
- 1/2 cup dry white wine
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- Season the lamb with salt, pepper, paprika, and cumin.
- Heat the olive oil in a large ovenproof pot over medium-high heat.
- Add the lamb chunks and cook until browned on all sides.
- Remove the lamb from the pot and set aside.
- Add the onion and garlic to the pot and cook until softened.
- Stir in the oregano and cook for another minute.
- Pour in the white wine and simmer until reduced by half.
- Return the lamb to the pot and add the chicken broth.
- Cover the pot and transfer to the preheated oven.
- Bake for 1 hour, or until the lamb is tender.
- Remove from the oven and let it rest for a few minutes before serving.
