Majorcan Lamb

Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. Season the lamb with salt, pepper, paprika, and cumin.
  3. Heat the olive oil in a large ovenproof pot over medium-high heat.
  4. Add the lamb chunks and cook until browned on all sides.
  5. Remove the lamb from the pot and set aside.
  6. Add the onion and garlic to the pot and cook until softened.
  7. Stir in the oregano and cook for another minute.
  8. Pour in the white wine and simmer until reduced by half.
  9. Return the lamb to the pot and add the chicken broth.
  10. Cover the pot and transfer to the preheated oven.
  11. Bake for 1 hour, or until the lamb is tender.
  12. Remove from the oven and let it rest for a few minutes before serving.
