Ingredients
- 1 cup red lentils
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 2 carrots, diced
- 2 potatoes, diced
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well and cook for 1-2 minutes until fragrant.
- Add the diced carrots and potatoes to the pot, and stir to coat them with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the red lentils and continue to simmer for an additional 10-15 minutes, or until the lentils are cooked through and the curry has thickened.
- Season with salt and pepper to taste. Serve the Makbous Adas hot, garnished with fresh cilantro.
