Ingredients

  • 1 cup red lentils
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 2 carrots, diced
  • 2 potatoes, diced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well and cook for 1-2 minutes until fragrant.
  3. Add the diced carrots and potatoes to the pot, and stir to coat them with the spices.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
  5. Stir in the red lentils and continue to simmer for an additional 10-15 minutes, or until the lentils are cooked through and the curry has thickened.
  6. Season with salt and pepper to taste. Serve the Makbous Adas hot, garnished with fresh cilantro.
