Makbous (arabian Nights Lamb Stew)
Makbous is a traditional Saudi Arabian lamb stew that is packed with aromatic spices and flavors. It's a hearty and comforting dish that is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 kg lamb, cut into chunks
- 2 cups basmati rice
- 2 onions, finely chopped
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 4 cups chicken or beef broth
- 1/2 cup raisins
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the chopped onions and garlic, and cook until softened.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes until fragrant.
- Add the rice and broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
- Stir in the raisins and continue to simmer for another 30 minutes, or until the lamb is tender and the rice is cooked.
- Season with salt and pepper, and garnish with chopped cilantro before serving.
