Ingredients

  • 1 kg lamb, cut into chunks
  • 2 cups basmati rice
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 4 cups chicken or beef broth
  • 1/2 cup raisins
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the chopped onions and garlic, and cook until softened.
  3. Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes until fragrant.
  4. Add the rice and broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
  5. Stir in the raisins and continue to simmer for another 30 minutes, or until the lamb is tender and the rice is cooked.
  6. Season with salt and pepper, and garnish with chopped cilantro before serving.
