Makbous (bahraini Chicken And Rice Casserole)
Makbous is a traditional Bahraini dish that features flavorful spiced chicken and fragrant rice. This hearty casserole is a staple in Bahraini cuisine and is perfect for a comforting family meal.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups basmati rice
- 1 large onion, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2 tbsp baharat spice mix
- 1 tsp turmeric
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp cayenne pepper
- 4 cups chicken broth
- 1/4 cup raisins
- 1/4 cup slivered almonds
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the baharat spice mix, turmeric, cinnamon, cardamom, cayenne pepper, and minced garlic. Cook for 2 minutes until fragrant.
- Add the diced tomatoes, rice, and chicken broth to the pot. Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Stir in the raisins and continue to cook for another 10 minutes, or until the rice is tender and the chicken is cooked through.
- Meanwhile, in a small pan, toast the slivered almonds until golden brown.
- Once the makbous is ready, transfer it to a serving dish and garnish with the toasted almonds.
