Makbous (date And Almond Stuffed Chicken)
Makbous is a traditional Omani dish that features succulent chicken stuffed with sweet dates and crunchy almonds. This flavorful and aromatic dish is a perfect representation of Omani cuisine, with a perfect balance of sweet and savory flavors.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pitted dates, chopped
- 1/2 cup almonds, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 cups basmati rice
- 3 cups chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chopped dates, almonds, cumin, coriander, cinnamon, salt, and pepper.
- Cut a pocket into each chicken breast and stuff with the date and almond mixture. Secure with toothpicks.
- Heat the olive oil in a large skillet over medium heat. Sear the stuffed chicken breasts until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, sauté the onion and garlic until softened.
- Add the basmati rice to the skillet and stir to coat with the onion and garlic mixture.
- Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 15 minutes.
- Arrange the seared chicken breasts on top of the rice in the skillet.
- Cover the skillet and transfer to the preheated oven. Bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
- Remove the toothpicks from the chicken and serve hot.
