Ingredients

  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/2 cup mixed nuts (almonds, pistachios, cashews)
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the chicken thighs to the pot and brown them on both sides.
  3. Stir in the ground cumin, coriander, turmeric, cinnamon, and cardamom, coating the chicken and onions with the spices.
  4. Add the basmati rice to the pot and stir to combine with the chicken and spices.
  5. Pour in the chicken broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  6. After 20 minutes, sprinkle the mixed nuts over the rice and chicken, cover the pot, and continue to cook for an additional 10 minutes or until the rice is tender and the chicken is cooked through.
  7. Once done, fluff the rice with a fork and serve the Makbous Djaj Bil Fustuq hot, garnished with additional nuts if desired.
