Makbous Djaj (spiced Rice With Chicken And Potatoes)

Ingredients

  • 2 cups basmati rice
  • 4 chicken thighs
  • 2 large potatoes, cut into wedges
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 3 tablespoons Arabic mixed spice blend
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the Arabic mixed spice blend, turmeric, cinnamon, cardamom, and cloves to the pot. Stir to combine with the onion and garlic.
  4. Add the diced tomatoes and tomato paste to the pot. Cook for a few minutes until the tomatoes soften.
  5. Return the browned chicken thighs to the pot. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.
  6. After 30 minutes, add the basmati rice and potato wedges to the pot. Season with salt and pepper. Cover and continue to simmer for another 20-25 minutes, or until the rice is cooked and the chicken and potatoes are tender.
  7. Once done, fluff the rice with a fork and serve the Makbous Djaj hot.
