Makbous Djaj (spiced Rice With Chicken And Potatoes)
Makbous Djaj is a traditional Kuwaiti dish featuring spiced rice, tender chicken, and flavorful potatoes. This aromatic and hearty meal is perfect for sharing with family and friends.
Ingredients
- 2 cups basmati rice
- 4 chicken thighs
- 2 large potatoes, cut into wedges
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 3 tablespoons Arabic mixed spice blend
- 1 teaspoon turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the Arabic mixed spice blend, turmeric, cinnamon, cardamom, and cloves to the pot. Stir to combine with the onion and garlic.
- Add the diced tomatoes and tomato paste to the pot. Cook for a few minutes until the tomatoes soften.
- Return the browned chicken thighs to the pot. Pour in the chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.
- After 30 minutes, add the basmati rice and potato wedges to the pot. Season with salt and pepper. Cover and continue to simmer for another 20-25 minutes, or until the rice is cooked and the chicken and potatoes are tender.
- Once done, fluff the rice with a fork and serve the Makbous Djaj hot.
