Makbous (fragrant Rice With Chicken And Cardamom)
Makbous is a traditional Yemeni dish featuring fragrant rice, tender chicken, and aromatic cardamom. This flavorful and comforting dish is perfect for a family dinner or a special occasion.
Ingredients
- 2 cups basmati rice
- 4 chicken thighs, skin-on
- 1 large onion, finely chopped
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon ground turmeric
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- Salt and pepper to taste
- 4 cups chicken broth
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken thighs and brown them on both sides. Remove the chicken and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the diced tomatoes, garlic, tomato paste, and spices. Cook for a few minutes until fragrant.
- Stir in the rice and cook for another 2 minutes. Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, return the chicken to the pot, and cover. Simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and serve the makbous hot, garnished with chopped cilantro.
