Makbous (fragrant Rice With Chicken And Cardamom)

Ingredients

  • 2 cups basmati rice
  • 4 chicken thighs, skin-on
  • 1 large onion, finely chopped
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken thighs and brown them on both sides. Remove the chicken and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the diced tomatoes, garlic, tomato paste, and spices. Cook for a few minutes until fragrant.
  3. Stir in the rice and cook for another 2 minutes. Pour in the chicken broth and bring to a boil.
  4. Reduce the heat to low, return the chicken to the pot, and cover. Simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  5. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and serve the makbous hot, garnished with chopped cilantro.
