Makbous (fragrant Saffron Rice With Chicken)

Ingredients

  • 2 cups basmati rice
  • 4 chicken thighs
  • 1 large onion, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • Pinch of saffron threads
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the chicken thighs to the pot and brown them on all sides.
  3. Stir in the diced tomatoes, tomato paste, and all the spices. Cook for a few minutes until fragrant.
  4. Add the basmati rice to the pot and stir to coat it with the spice mixture.
  5. Dissolve the saffron threads in the chicken broth, then pour the broth into the pot.
  6. Season with salt and pepper, then bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
  7. Fluff the rice with a fork and serve the Makbous hot, garnished with toasted almonds and fresh herbs if desired.
