Makbous (fragrant Saffron Rice With Chicken)
Makbous is a traditional Emirati dish that features fragrant saffron rice with tender chicken, infused with warm spices and flavors. This dish is a staple in Emirati cuisine and is perfect for a comforting and satisfying meal.
Ingredients
- 2 cups basmati rice
- 4 chicken thighs
- 1 large onion, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- Pinch of saffron threads
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the chicken thighs to the pot and brown them on all sides.
- Stir in the diced tomatoes, tomato paste, and all the spices. Cook for a few minutes until fragrant.
- Add the basmati rice to the pot and stir to coat it with the spice mixture.
- Dissolve the saffron threads in the chicken broth, then pour the broth into the pot.
- Season with salt and pepper, then bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
- Fluff the rice with a fork and serve the Makbous hot, garnished with toasted almonds and fresh herbs if desired.
