Makbous Laham (spiced Lamb Shanks With Tomato Sauce)
Makbous Laham is a traditional Emirati dish featuring spiced lamb shanks cooked in a rich tomato sauce. This hearty and flavorful dish is perfect for a special family dinner or a festive occasion.
Ingredients
- 4 lamb shanks
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 teaspoons baharat spice mix
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 3 cups chicken or beef broth
- 2 cups basmati rice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season the lamb shanks with salt, pepper, and half of the baharat spice mix.
- Heat some oil in a large pot over medium-high heat. Brown the lamb shanks on all sides, then remove and set aside.
- In the same pot, add the chopped onions and garlic. Cook until softened.
- Add the diced tomatoes, tomato paste, and the remaining baharat spice mix. Cook for a few minutes.
- Return the lamb shanks to the pot and pour in the broth. Bring to a boil, then reduce the heat, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
- While the lamb is cooking, prepare the basmati rice according to the package instructions.
- Serve the spiced lamb shanks and tomato sauce over the cooked basmati rice. Garnish with fresh cilantro.
