Ingredients

  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons Omani spice mix
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 cup vegetable oil
  • Salt to taste
  • 4 cups chicken broth
  • 1/4 cup raisins
  • 1/4 cup slivered almonds

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the Omani spice mix, turmeric, cumin, coriander, cinnamon, cloves, and cardamom. Cook for 2 minutes.
  4. Add the chopped tomatoes and minced garlic to the pot. Cook for another 5 minutes.
  5. Stir in the basmati rice and chicken broth. Season with salt, cover the pot, and simmer for 20 minutes.
  6. Once the rice is cooked, sprinkle the raisins and slivered almonds on top. Cover the pot and let it sit for 5 minutes before serving.
