Makbous (omani Chicken Biryani)
Makbous, also known as Omani Chicken Biryani, is a traditional dish from Omani cuisine that is packed with aromatic flavors and spices. This dish is perfect for a special occasion or a family gathering.
Ingredients
- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 cloves garlic, minced
- 2 tablespoons Omani spice mix
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamom
- 1/4 cup vegetable oil
- Salt to taste
- 4 cups chicken broth
- 1/4 cup raisins
- 1/4 cup slivered almonds
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the Omani spice mix, turmeric, cumin, coriander, cinnamon, cloves, and cardamom. Cook for 2 minutes.
- Add the chopped tomatoes and minced garlic to the pot. Cook for another 5 minutes.
- Stir in the basmati rice and chicken broth. Season with salt, cover the pot, and simmer for 20 minutes.
- Once the rice is cooked, sprinkle the raisins and slivered almonds on top. Cover the pot and let it sit for 5 minutes before serving.
