Makbous (omani Spiced Lamb And Apricot Tagine)

Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tsp ground turmeric
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 1/2 tsp cayenne pepper
  • 1/2 cup dried apricots
  • 2 cups basmati rice
  • 4 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large tagine or heavy-bottomed pot, heat some oil over medium heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the onions and garlic. Cook until softened, about 5 minutes.
  3. Stir in the turmeric, cumin, cinnamon, cardamom, ginger, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Return the lamb to the pot. Add the dried apricots and season with salt and pepper. Pour in the chicken broth and bring to a simmer.
  5. Cover the pot and cook on low heat for 1.5 to 2 hours, or until the lamb is tender.
  6. While the lamb is cooking, rinse the basmati rice until the water runs clear. Drain the rice and set aside.
  7. Once the lamb is tender, stir in the rice. Cover and cook for an additional 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Before serving, garnish the makbous with chopped cilantro and parsley.
