Makbous (omani Spiced Lamb And Apricot Tagine)
Makbous is a traditional Omani dish that features spiced lamb and apricots cooked in a tagine. This flavorful and aromatic dish is a staple in Omani cuisine, and it's perfect for a special family meal or a festive occasion.
Ingredients
- 1 kg lamb, cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 tsp ground turmeric
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp ground ginger
- 1/2 tsp cayenne pepper
- 1/2 cup dried apricots
- 2 cups basmati rice
- 4 cups chicken broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large tagine or heavy-bottomed pot, heat some oil over medium heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the onions and garlic. Cook until softened, about 5 minutes.
- Stir in the turmeric, cumin, cinnamon, cardamom, ginger, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the lamb to the pot. Add the dried apricots and season with salt and pepper. Pour in the chicken broth and bring to a simmer.
- Cover the pot and cook on low heat for 1.5 to 2 hours, or until the lamb is tender.
- While the lamb is cooking, rinse the basmati rice until the water runs clear. Drain the rice and set aside.
- Once the lamb is tender, stir in the rice. Cover and cook for an additional 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Before serving, garnish the makbous with chopped cilantro and parsley.
