Makbous (omani Spiced Lamb And Bell Pepper Tagine)

Ingredients

  • 500g lamb, cut into cubes
  • 2 tbsp Omani spice blend
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 bell peppers, sliced
  • 1 cup basmati rice
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the lamb cubes with Omani spice blend, salt, and pepper.
  2. Heat olive oil in a tagine or large skillet over medium heat.
  3. Add the seasoned lamb and cook until browned on all sides, then remove from the tagine and set aside.
  4. In the same tagine, sauté the onion and garlic until softened.
  5. Add the bell peppers and continue to cook for a few minutes.
  6. Stir in the basmati rice and chicken broth, then return the lamb to the tagine.
  7. Cover and simmer for 45-50 minutes, or until the rice is cooked and the lamb is tender.
  8. Adjust seasoning if needed, then serve hot.
