Makbous (omani Spiced Lamb And Eggplant Tagine)
Makbous is a traditional Omani dish that features spiced lamb and eggplant cooked in a flavorful tagine. This dish is a perfect blend of aromatic spices and tender meat, creating a rich and satisfying meal.
Ingredients
- 1 1/2 lbs (700g) lamb, cut into chunks
- 2 eggplants, sliced
- 2 onions, finely chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 2 cups (480ml) chicken broth
- 1/4 cup (60ml) olive oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a tagine or large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides.
- Add the chopped onions and minced garlic to the pot. Cook until the onions are soft and translucent.
- Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
- Add the diced tomatoes and eggplant slices to the pot. Pour in the chicken broth and season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 45-50 minutes, or until the lamb is tender and the eggplant is soft.
- Serve the Makbous hot over cooked rice.
