Makbous (omani Spiced Lamb And Eggplant Tagine)

Ingredients

  • 1 1/2 lbs (700g) lamb, cut into chunks
  • 2 eggplants, sliced
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups (480ml) chicken broth
  • 1/4 cup (60ml) olive oil
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a tagine or large pot, heat the olive oil over medium heat. Add the lamb chunks and brown them on all sides.
  2. Add the chopped onions and minced garlic to the pot. Cook until the onions are soft and translucent.
  3. Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
  4. Add the diced tomatoes and eggplant slices to the pot. Pour in the chicken broth and season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 45-50 minutes, or until the lamb is tender and the eggplant is soft.
  6. Serve the Makbous hot over cooked rice.
