Makbous (omani Spiced Lamb And Spinach Tagine)

Ingredients

  • 1.5 lbs lamb, cut into chunks
  • 2 tbsp Omani spice blend
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cloves
  • 1/2 tsp cayenne pepper
  • 1/2 cup tomato puree
  • 2 cups fresh spinach
  • 2 cups cooked basmati rice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large tagine or deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the lamb chunks and Omani spice blend, and brown the meat on all sides.
  4. Stir in the ground turmeric, cumin, coriander, cinnamon, cardamom, cloves, and cayenne pepper.
  5. Pour in the tomato puree and enough water to cover the meat.
  6. Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the lamb is tender.
  7. Add the fresh spinach to the tagine and cook until wilted.
  8. Season with salt and pepper to taste.
  9. Serve the spiced lamb and spinach tagine over cooked basmati rice.
