Makbous (omani Spiced Lamb And Spinach Tagine)
Makbous is a traditional Omani dish that features spiced lamb and spinach cooked in a flavorful tagine. This dish is a perfect blend of aromatic spices and tender meat, creating a comforting and satisfying meal.
Ingredients
- 1.5 lbs lamb, cut into chunks
- 2 tbsp Omani spice blend
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp ground cloves
- 1/2 tsp cayenne pepper
- 1/2 cup tomato puree
- 2 cups fresh spinach
- 2 cups cooked basmati rice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large tagine or deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the lamb chunks and Omani spice blend, and brown the meat on all sides.
- Stir in the ground turmeric, cumin, coriander, cinnamon, cardamom, cloves, and cayenne pepper.
- Pour in the tomato puree and enough water to cover the meat.
- Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the lamb is tender.
- Add the fresh spinach to the tagine and cook until wilted.
- Season with salt and pepper to taste.
- Serve the spiced lamb and spinach tagine over cooked basmati rice.
