Makbous (omani Spiced Lamb And Zucchini Tagine)
Makbous is a traditional Omani dish that features spiced lamb and zucchini cooked in a flavorful tagine. This dish is a perfect blend of Omani spices and tender lamb, creating a rich and aromatic meal that is sure to impress.
Ingredients
- 1 kg lamb, cut into chunks
- 2 tablespoons Omani spice blend
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 zucchinis, sliced
- 2 cups basmati rice
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Season the lamb chunks with Omani spice blend, salt, and pepper.
- Heat olive oil in a tagine or large pot over medium heat.
- Add the seasoned lamb and cook until browned on all sides. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the diced tomatoes and cook until they start to break down.
- Return the lamb to the pot and add the zucchinis.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 45 minutes to 1 hour, or until the lamb is tender.
- Meanwhile, rinse the basmati rice and cook according to package instructions.
- Serve the spiced lamb and zucchini tagine over the cooked basmati rice.
