Ingredients

  • 1 kg lamb, cut into chunks
  • 2 tablespoons Omani spice blend
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 zucchinis, sliced
  • 2 cups basmati rice
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the lamb chunks with Omani spice blend, salt, and pepper.
  2. Heat olive oil in a tagine or large pot over medium heat.
  3. Add the seasoned lamb and cook until browned on all sides. Remove and set aside.
  4. In the same pot, sauté the onion and garlic until softened.
  5. Add the diced tomatoes and cook until they start to break down.
  6. Return the lamb to the pot and add the zucchinis.
  7. Pour in the chicken broth and bring to a simmer. Cover and cook for 45 minutes to 1 hour, or until the lamb is tender.
  8. Meanwhile, rinse the basmati rice and cook according to package instructions.
  9. Serve the spiced lamb and zucchini tagine over the cooked basmati rice.
