Makbous Ribs (spiced Lamb Ribs With Tomato Sauce)

Ingredients

  • 1 kg lamb ribs
  • 2 tbsp Arabic spice mix
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 3 cups chicken broth
  • 1 cup basmati rice
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 2 tbsp ghee
  • Salt and pepper to taste

Instructions

  1. Season the lamb ribs with Arabic spice mix, salt, and pepper.
  2. Heat ghee in a large pot over medium heat and brown the lamb ribs on all sides. Remove and set aside.
  3. In the same pot, sauté the onions and garlic until softened.
  4. Add the diced tomatoes and tomato paste, and cook for 5 minutes.
  5. Return the lamb ribs to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the meat is tender.
  6. Meanwhile, prepare the rice according to package instructions.
  7. Once the lamb ribs are tender, stir in the raisins and slivered almonds. Cook for an additional 10 minutes.
  8. Serve the lamb ribs and tomato sauce over the cooked basmati rice.
