Makbous Ribs (spiced Lamb Ribs With Tomato Sauce)
Makbous Ribs is a traditional Emirati dish featuring spiced lamb ribs cooked in a rich tomato sauce. This flavorful and aromatic dish is a staple in Emirati cuisine and is perfect for sharing with family and friends.
Ingredients
- 1 kg lamb ribs
- 2 tbsp Arabic spice mix
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 3 cups chicken broth
- 1 cup basmati rice
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 tbsp ghee
- Salt and pepper to taste
Instructions
- Season the lamb ribs with Arabic spice mix, salt, and pepper.
- Heat ghee in a large pot over medium heat and brown the lamb ribs on all sides. Remove and set aside.
- In the same pot, sauté the onions and garlic until softened.
- Add the diced tomatoes and tomato paste, and cook for 5 minutes.
- Return the lamb ribs to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the meat is tender.
- Meanwhile, prepare the rice according to package instructions.
- Once the lamb ribs are tender, stir in the raisins and slivered almonds. Cook for an additional 10 minutes.
- Serve the lamb ribs and tomato sauce over the cooked basmati rice.
