Makbous Samak (spiced Grilled Prawns With Saffron Rice)

Ingredients

  • 500g large prawns, cleaned and deveined
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 cups basmati rice
  • 4 cups water
  • 1/4 teaspoon saffron threads
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine the prawns with cumin, coriander, turmeric, paprika, cayenne pepper, salt, and pepper. Let it marinate for 15 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  3. Add the diced tomatoes and tomato paste to the pot, and cook for 5 minutes.
  4. Stir in the basmati rice and saffron threads, then pour in the water. Season with salt and pepper, and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked through.
  5. While the rice is cooking, grill the marinated prawns over medium-high heat for 2-3 minutes per side, or until they are pink and opaque.
  6. Serve the spiced grilled prawns over the saffron rice, garnished with fresh cilantro.
