Ingredients

  • 1 lb beef, cubed
  • 1 cup lentils, rinsed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 2 tomatoes, diced
  • 4 cups beef or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
  5. Pour in the broth and add the rinsed lentils. Season with salt and pepper to taste.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45-50 minutes, or until the beef is tender and the lentils are cooked through.
  7. Adjust the seasoning if needed and serve the Makbous hot.
