Makbous (sudanese Spiced Beef And Lentil Stew)
Makbous is a traditional Sudanese spiced beef and lentil stew that is bursting with flavor. This hearty and comforting dish is perfect for a cozy family meal or a special occasion.
Ingredients
- 1 lb beef, cubed
- 1 cup lentils, rinsed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 2 tomatoes, diced
- 4 cups beef or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
- Stir in the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
- Pour in the broth and add the rinsed lentils. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45-50 minutes, or until the beef is tender and the lentils are cooked through.
- Adjust the seasoning if needed and serve the Makbous hot.
