Ingredients

  • 2 lbs beef, cut into cubes
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups basmati rice
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the chopped onions and minced garlic, and cook until the onions are translucent.
  3. Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, ground cinnamon, and cayenne pepper.
  4. Pour in the beef broth and season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer for 1.5 hours.
  5. While the stew is simmering, rinse the basmati rice and cook it according to the package instructions.
  6. Serve the spiced beef and tomato stew over the cooked basmati rice.
