Makbous (sudanese Spiced Beef And Tomato Stew)
Makbous is a traditional Sudanese spiced beef and tomato stew that is bursting with flavor. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 2 lbs beef, cut into cubes
- 2 onions, finely chopped
- 4 tomatoes, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 2 cups basmati rice
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium heat.
- Add the chopped onions and minced garlic, and cook until the onions are translucent.
- Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, ground cinnamon, and cayenne pepper.
- Pour in the beef broth and season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer for 1.5 hours.
- While the stew is simmering, rinse the basmati rice and cook it according to the package instructions.
- Serve the spiced beef and tomato stew over the cooked basmati rice.
