Makbous (sudanese Spiced Beef Stew)
Makbous is a traditional Sudanese spiced beef stew that is bursting with flavor. This hearty and aromatic dish is perfect for a comforting meal with family and friends.
Ingredients
- 2 lbs beef, cubed
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup basmati rice
- 4 cups beef broth
- 1/4 cup tomato paste
- 1/4 cup vegetable oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef to the pot and brown on all sides.
- Stir in the cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the tomatoes, tomato paste, carrots, and potatoes to the pot. Pour in the beef broth and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 1.5 hours, or until the beef is tender.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear. Drain the rice and add it to the pot. Cook for an additional 15 minutes, or until the rice is tender and the liquid has been absorbed.
- Adjust the seasoning if needed, then serve the Makbous hot with a side of salad or flatbread.
