Makbous (sudanese Spiced Lamb And Lentil Stew)
Makbous is a traditional Sudanese spiced lamb and lentil stew that is bursting with flavor. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1.5 lbs (700g) lamb, cut into chunks
- 1 cup brown lentils, rinsed
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, diced
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp cayenne pepper
- 4 cups (1 liter) chicken or vegetable broth
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the ground cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the diced tomatoes, tomato paste, and carrots to the pot, and stir to combine.
- Pour in the chicken or vegetable broth, and add the rinsed lentils. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender and the lentils are cooked through.
- Adjust the seasoning if needed, and serve the Makbous hot with rice or bread.
