Makbous (sudanese Spiced Lamb And Vegetable Stew)
Makbous is a traditional Sudanese dish that features spiced lamb and a variety of vegetables, creating a flavorful and hearty stew. This dish is perfect for a comforting and satisfying meal, especially during the colder months.
Ingredients
- 1.5 lbs lamb, cut into chunks
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup basmati rice
- 4 cups chicken broth
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onions and sauté until they are soft and translucent. Add the minced garlic and cook for another minute.
- Stir in the diced tomatoes, tomato paste, ground cumin, ground coriander, turmeric, cayenne pepper, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
- Return the browned lamb to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
- Add the sliced carrots, diced potatoes, and basmati rice to the pot. Stir well, cover, and continue to simmer for another 30-40 minutes, or until the rice and vegetables are tender.
- Once the stew is ready, adjust the seasoning if needed and serve hot.
