Makbous is a traditional Sudanese spiced lamb stew that is bursting with flavor and aromatic spices. This hearty stew is perfect for a cozy family dinner or a special occasion.

Makbous (sudanese Spiced Lamb Stew)

Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup basmati rice
  • 3 cups chicken broth
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 3 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the tomato paste, ground cumin, coriander, turmeric, cinnamon, cayenne pepper, salt, and pepper. Cook for 2 minutes to toast the spices.
  4. Add the diced tomatoes, carrots, and potatoes to the pot. Pour in the chicken broth and bring to a simmer. Cover and cook for 1.5 hours, or until the lamb is tender.
  5. Stir in the basmati rice and continue to cook for another 15-20 minutes, or until the rice is tender and the stew has thickened.
  6. Adjust the seasoning if needed and serve the Makbous hot.
