Makbous (sudanese Spiced Lamb Stew)
Makbous is a traditional Sudanese spiced lamb stew that is bursting with flavor and aromatic spices. This hearty stew is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 kg lamb, cut into chunks
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup basmati rice
- 3 cups chicken broth
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 3 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the tomato paste, ground cumin, coriander, turmeric, cinnamon, cayenne pepper, salt, and pepper. Cook for 2 minutes to toast the spices.
- Add the diced tomatoes, carrots, and potatoes to the pot. Pour in the chicken broth and bring to a simmer. Cover and cook for 1.5 hours, or until the lamb is tender.
- Stir in the basmati rice and continue to cook for another 15-20 minutes, or until the rice is tender and the stew has thickened.
- Adjust the seasoning if needed and serve the Makbous hot.
