Ingredients

  • 1 lb ground lamb
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 1/4 cup golden raisins
  • 1/4 cup slivered almonds, toasted

Instructions

  1. In a large bowl, combine the ground lamb, onion, garlic, parsley, cilantro, cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Mix well and form the mixture into meatballs.
  2. Heat the olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then remove them from the skillet and set aside.
  3. In the same skillet, add the diced tomatoes and chicken broth. Bring to a simmer.
  4. Stir in the rice and golden raisins. Place the meatballs back into the skillet, cover, and simmer for 25-30 minutes, or until the rice is cooked and the meatballs are tender.
  5. Sprinkle the toasted almonds over the dish before serving.
