Ingredients
- 1 lb ground lamb
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup long-grain rice
- 1/4 cup golden raisins
- 1/4 cup slivered almonds, toasted
Instructions
- In a large bowl, combine the ground lamb, onion, garlic, parsley, cilantro, cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Mix well and form the mixture into meatballs.
- Heat the olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then remove them from the skillet and set aside.
- In the same skillet, add the diced tomatoes and chicken broth. Bring to a simmer.
- Stir in the rice and golden raisins. Place the meatballs back into the skillet, cover, and simmer for 25-30 minutes, or until the rice is cooked and the meatballs are tender.
- Sprinkle the toasted almonds over the dish before serving.
