Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 cup canned diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Add the rice, beef broth, and diced tomatoes to the pot. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 hours, or until the beef is tender and the rice is cooked.
  6. Stir in the chopped cilantro and adjust the seasoning if needed.
  7. Serve the Makbous hot, garnished with additional cilantro if desired.
