Makbous (tunisian Spiced Beef Stew)
Makbous is a traditional Tunisian spiced beef stew that is bursting with flavor. This hearty and comforting dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 cup long-grain rice
- 2 cups beef broth
- 1 cup canned diced tomatoes
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef cubes to the pot and brown on all sides.
- Stir in the cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the rice, beef broth, and diced tomatoes to the pot. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 hours, or until the beef is tender and the rice is cooked.
- Stir in the chopped cilantro and adjust the seasoning if needed.
- Serve the Makbous hot, garnished with additional cilantro if desired.
