Ingredients

  • 4 chicken thighs
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 tomatoes, diced
  • 3 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken thighs on both sides. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the spices and cook for 1-2 minutes until fragrant.
  4. Stir in the diced tomatoes and rice, then return the chicken to the pot.
  5. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
  6. Stir in the chopped cilantro and parsley before serving.
