Makbous (tunisian Spiced Chicken And Rice)
Makbous is a traditional Tunisian dish featuring spiced chicken and flavorful rice. This dish is perfect for a comforting and satisfying meal that is bursting with North African flavors.
Ingredients
- 4 chicken thighs
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 2 tomatoes, diced
- 3 cups chicken broth
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken thighs on both sides. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the spices and cook for 1-2 minutes until fragrant.
- Stir in the diced tomatoes and rice, then return the chicken to the pot.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
- Stir in the chopped cilantro and parsley before serving.
