Makbous (tunisian Spiced Lamb Chops)
Makbous is a traditional Tunisian dish featuring spiced lamb chops served with fragrant rice. This flavorful and aromatic dish is a staple in Tunisian cuisine, perfect for a special dinner or gathering with family and friends.
Ingredients
- 4 lamb chops
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 4 cups chicken or vegetable broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Season the lamb chops with salt and pepper, then sear them in the pot until browned on both sides. Remove the chops and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, coriander, paprika, turmeric, and cayenne pepper. Stir for 1-2 minutes until fragrant.
- Add the diced tomatoes and tomato paste to the pot, stirring to combine with the spices and onions.
- Return the lamb chops to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 45-50 minutes, or until the lamb is tender.
- While the lamb is cooking, prepare the basmati rice according to package instructions.
- Serve the spiced lamb chops over the fragrant rice, spooning the flavorful sauce over the top. Enjoy hot!
