Makemba Na Likofi (fried Cassava Balls)

Ingredients

  • 2 lbs cassava, peeled and cut into chunks
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying

Instructions

  1. Boil the cassava chunks in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. Mash the cassava until smooth and add salt and black pepper to taste.
  3. Take a small portion of the mashed cassava and roll it into a ball. Repeat with the remaining cassava.
  4. Coat each ball with flour, shaking off any excess.
  5. Heat oil in a pan over medium heat and fry the cassava balls until golden brown, about 5-7 minutes.
  6. Remove the fried cassava balls and drain on paper towels.
  7. Serve hot and enjoy!
