Ingredients

  • 2 large eggplants, thinly sliced lengthwise
  • 1 lb ground beef or lamb

  • 2 tomatoes, diced

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup vegetable oil for frying

Instructions

  1. Place the eggplant slices on a paper towel and sprinkle with salt. Let them sit for 15 minutes to draw out the bitterness. Pat dry with another paper towel.
  2. In a bowl, mix the ground meat, chopped onion, diced tomatoes, parsley, cumin, paprika, salt, and pepper.
  3. Place a spoonful of the meat mixture on one end of an eggplant slice and roll it up. Secure with a toothpick.
