Ingredients
- 2 large eggplants, thinly sliced lengthwise
- 1 lb ground beef or lamb
- 1 onion, finely chopped

- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup vegetable oil for frying
Instructions
- Place the eggplant slices on a paper towel and sprinkle with salt. Let them sit for 15 minutes to draw out the bitterness. Pat dry with another paper towel.
